Soil :
Poor soil with a limestone dominance, loamy-clay located in the alluvial cone of the Combe de Lavaux, having a very stony profile due to the erosion of the limestone plateaus, imparting a very mineral, even saline note.
Charactéristics :
Its deep, brilliant red hue reveals a wine with an aromatic character, fruity and subtly spiced. It stands out for its depth and intensity.
Vinification :
Our vines average 65 years of age, providing exceptional maturity and depth to the fruit.
Vinification begins with 100% destemmed grapes, followed by a meticulous three-stage sorting process:

First selection in the vineyard : only the finest bunches are hand-harvested

Second sorting on a vibrating table : damaged berries are carefully removed

Third sorting with a berry separator : only the most flawless berries are kept
Maceration and natural fermentation (without yeast, enzyme, or tartaric acid) for 3 weeks in concrete tanks without temperature control, with daily pumping over and punching down.
The wine is aged for 16 to 18 months in Burgundy barrels, 20-40% are new.
Bottling is carried out by gravity, without filtration, preserving the wine’s full richness and complexity.
We use minimal doses of SO2 from the arrival of the harvest to bottling to maintain the wine's good stability.
