Characteristics :
The Premier Cru "Les Champeaux", with its garnet cherry hue, offers a wine with a floral and spicy aromatic character. This wine stands out for its firm structure and silky, exquisitely delicate tannins.
It reveals great purity, remarkable complexity, and a perfect balance between
power and finesse.
An ideal choice for connoisseurs of fine wines that are both elegant and intense.
Vinification :
100% destemmed harvest, sorted three times (first sorting in the vineyard, second on a vibrating sorting table, and finally through a state-of-the-art destemmer).
Maceration and natural fermentation (without yeast, enzymes, or tartaric acid) for 3 weeks in an uncooled stainless steel tank, with daily pumping over and punching down.
Aging for 18 months in Burgundy barrels, 33% new, then bottling by gravity without filtration.
We use minimal doses of SO2 throughout the aging process to maintain the wine's good stability.
