Characteristic :
The "Mes Favorites cuvée” reveals the energy of Pinot Noir, structured and elegant with great aging potential, combining the flavor of ripe red fruits and spices.
The Signature Cuvée of the Domaine.
Soil :
Predominantly clay-limestone, originating from 13 climates located in Gevrey-Chambertin and Brochon, including En Reniard, Les Corvées, Jouise, Champerrier...
The average age of the vines is approximately 75 years.
Aging :
For 18 months in Burgundy barrels, 30% to 50% are new , then bottling by gravity without filtration.
We use minimal doses of SO2 from the arrival of the harvest to bottling to maintain the wine's good stability.
Vinification :
100% destemmed harvest, sorted three times (first sorting in the vineyard, second on a vibrating sorting table, and finally through a state-of-the-art destemmer).
Maceration and natural fermentation for 3 weeks in a concrete tank without temperature control, with daily pumping over and punching down.
