The South-East orientation on the mid-slope has a climatic situation that provides it with a perfect balance: Bathonian soils that are very calcareous and stony, as well as marls rich in Ostrea Acuminata.

The Premier Cru Lavaux Saint-Jacques, with its deep ruby hue, reveals a wine of distinguished character, led by dark fruit aromas and refined oaky undertones.

Vinification :
Our vines average 65 years of age, providing exceptional maturity and depth to the fruit.
Vinification begins with 100% destemmed grapes, followed by a meticulous three-stage sorting process:

First selection in the vineyard : only the finest bunches are hand-harvested

Second sorting on a vibrating table : damaged berries are carefully removed

Third sorting with a berry separator : only the most flawless berries are kept
Fermentation takes place naturally, without added yeast, enzymes, or tartaric acid, over the course of three weeks in stainless steel tanks, without temperature control.
Daily pump-overs and punch-downs ensure optimal extraction of both aromas and tannins.
The wine is aged for 16 to 18 months in Burgundy oak barrels, 50% of which are new.
Bottling is carried out by gravity, without filtration, preserving the wine’s full richness and complexity.
We use minimal doses of SO2 from harvest to bottling to ensure stability while maintaining the integrity and purity of the wine.
