This late terroir is located above the Grand Cru des Echezeaux, on the edge of the woods, on a very steep slope at an altitude of 300m.
Vinification :
Our vines average 50 years of age, providing exceptional maturity and depth to the fruit.
100% destemmed harvest, sorted three times :

First selection in the vineyard : only the finest bunches are hand-harvested

Second on a vibrating sorting table : damaged berries are carefully removed

Third through a state-of-the art destmmer : only the most flawless berries are kept
Maceration and natural fermentation (without yeast, enzymes, or tartaric acid) for 3 weeks in stainless steel tanks without temperature control, with daily pumping over and punching down.
Aging for 16 to 18 months in Burgundy barrels, 35-50% of which are new, followed by bottling by gravity without filtration.
We use minimal doses of SO2 from the arrival of the harvest to bottling to maintain the wine's good stability.
