Les Pince Vin offers an immediate crunchy pleasure, combining the full fruity expression of Gevrey Pinot Noir..
A delight stamped with the signature of the Alain Burguet estate.
Vinification :
100% destemmed harvest, sorted three times (first sorting in the vineyard, second on a vibrating sorting table, and finally through a state-of-the-art destemmer).
Maceration and natural fermentation (without yeast, enzymes, or tartaric acid) for 3 weeks in an uncooled stainless steel tank, with daily pumping over and punching down.
Aging for 16 to 18 months in Burgundy barrels, without new wood, followed by bottling by gravity without filtration.
We use minimal doses of SO2 from the arrival of the harvest to bottling to maintain the wine's good stability.
Aging potential: up to 5 years depending on the vintage.
